Polenta is growing more and more popular in restaurants across America, but what is behind the Italian corn dish? In this episode of What’s This Food?!, Daniel Delaney makes a cheesy, creamy polenta stovetop.

Dan, I love that you go for traditional flavors and simple yet challenging recipes. I decided to change up one of my own recipes for bacon cornbread (with lots of Irish butter) and instead make Parmesan polenta muffins with crispy pancetta. These savory muffins pack a lot of flavor and have a smoother texture than cornmeal muffins. If you haven’t baked with polenta yet, try it!
Wow! What a great suggestion. I haven’t tried backing with it, but I hope to in the future. Yum!
Hi Dan, what do you think about sardines? I know they’re good for you and I love fish, but for some reason I am very intimidated by this little can of fish. I bought the King Oscar Brisling Sardines in olive oil. Any other ways to eat them other than just straight out of the can?
Thanks,
Carrie
Has anyone suggested huitlacoche for WTF? I might sponsor the show just to hear you have to say it over and over again!
Not yet! But I’ll be sure to cover it. Will you be at the Roadfood Festival?
