Hearts of Palm are great! I use them in salads all the time. As kids in FL we used to eat them raw right from the woods …. Great episode! I am going to try your recipe tonight.

When Cabbage palms are very young, they are easy to get to the center “Palm groth” it takes two children with a little determination to simply pull and wiggle the center groth to basically rip out the center of the palm. It is not an easy process, and not all of the heart will be removed.
What you do get is a tasty snack that more resembles a white carrot or celery stock then what you would buy at the stores today. As a child it was a fun little treat, but required quite a bit of work to get
